Or even better still, different zones across the map where wind changes in a different direction in each one, so let's say if the West side of Florida is going NW to SE then the opposite side goes NE to SW and then south of Florida it goes south?

I would rather have wind currents so we can have common trade routes and need to plan our sail. The wind should depend on location, for ease of use I wouldn't mind if the map could show wind directions.

I really do like the thought, I just know that I would get irritated with one way always being a slower sail...

Would it be harder to make a "trade winds" and keep the current wind?

When you follow the direction of a trade wind you get a boost of speed while still have the wind change direction 360 to still allow of fast travel "against" a trade wind sometimes too.

The problem with this is that the RW winds are too predictable and consistent.  Strategy was greatly affected by the trades.  It was very easy to project force westwards and very difficult going east.  I would rather see the current cycling wind slowed down by a factor of 10.

Interesting proposition. But what if you ever want to bring anything to the Antilles? All currents go towards the US coast.

The map doesnt nessecarily need to match this map. There could be a wind channel that goes eastwards too.

If you think about it, sailing from Fort Royal to Charleston would be a dream on this map. If there was also a trade wind going eastwards then it would be nice too.

It'd certainly add to the navigating aspect of the game.

So would navigation tools like a sextant, but oh well ...

A slow counter clockwise turn of the wind is no less annoying than set trade winds. Hell if the winds reversed every 45-60 minutes you could plan your sail. (I prefer set wind directions that dont change)

I like it better when the wind stays that way. - So even after an hour the direction turns.
Every port and every place has the same conditions. Each ship has a better change against other ships.
square-rigger otherwise would be inferior with permanent headwind. For many players, the game would be too confusing.

May be there should be trade/wind channels, which give us high speed travel on that channel. So trader or some ships will prefer the high speed roads, but with the risk of getting intercepted ?

High speed roads around some coast and connection between distant coasts. But seems like a complicated task to achieve. Current wind seems to fit all, and it is the basic solution.
